"Gargoyles are stone-skinned sentinels that resemble twisted statues of horned beasts and grimacing faces. By day, they perch motionless on ledges and in alcoves, blending with the architecture of ruined temples, ancient fortresses, or cursed dungeons. By night, or when prey draws near, they spring to life with grinding stone joints and talon-like claws. Though they seem mindless, a faint malice burns in their eyes..."

Gargoyle Tactics...
Gargoyles can be encountered in two forms: their active flesh-and-blood form at night or when awakened by magic, and their dormant stone form during the day. In its stone form, a gargoyle remains completely motionless and will not interact with its environment or other creatures.
Its Defense Score increases to 8, making it highly resilient against physical damage.
GMs should use discretion when determining how much damage is needed to activate a dormant gargoyle and provoke it into fighting back...
